The Prickly Pear: NEIPA released last week to kick off our anniversary celebrations, but we felt this beer deserved a post of its own.
We had experimented with prickly pear infusions in the past, and it was so popular that we had to bring it back. For the official, large-scale brew, we tweaked the recipe to highlight the unique flavors of the prickly pear fruit. Despite its name, the prickly pear is not related to pears at all. Instead, it is the fruit of the paddle cactus.
We brewed this juicy and hazy New England IPA with oats, wheat, and some sweet-ass malts. Cashmere, Citra, and Mosaic hops make an appearance in the first wort, whirlpool, and dry hopping for a bold impact. Together, these hops bring tropical fruitiness, citrus and melon notes, and a touch of pine.
Finally, we fermented this hazy beaut with prickly pear, which are an uncommon flavor, but they are reminiscent of sweet melons and even bubblegum.
The result is a 6.6% ABV, 56 IBU New England IPA that is ripe with fruity, melon-like flavors.
