Now available on tap and to go: Rouge Sauvage

We’re proud to announce the release of Rouge Sauvage (Wild Red). This beauty has been fermenting for nearly a year, and it’s finally ready for you to enjoy.

Inspired by the beers produced in the Flemish region of Belgium, Rouge Sauvage (Wild Red) is a masterpiece of flavors. This copper-colored ale was first soured with a wild pitch of Lactobacillus bacteria when we brewed it in December.

Once it was ready to be transferred, we fermented it in third-use Buffalo Trace barrels with specialty yeast that carries a horsey, spicy, cherry pie funk. Because the barrels are third-use, they don’t retain any of the bourbon characteristics. Instead, they impart spice characteristics from the oak and function as a vessel for this unique fermentation that won’t infect the rest of our equipment.

The finished product is a masterful barrel-fermented sour that’s sure to please. At 5.4% ABV, it’s perfect pairing for holiday meals and charcuterie boards. Find it on tap and in beautiful gold foil-stamped 750mL bottles.
